Instructions:

  • 2 cloves of garlic
  • 1 cup of tomato passata
  • 2 tbsp of tomato paste
  • 1 tsp of dried oregano
  • 1/2 cup of Metaxa brandy (optional)

Instructions:

In a pan, heat the oil and sauté the onion until it’s golden brown. Add the garlic and cook for an additional minute until fragrant. Add the tomato passata, tomato paste, oregano and stir well. Cook over low heat for approximately 10 minutes. Add the Metaxa brandy (if using) and cook for another 2-3 minutes.

How to Prepare:

This sauce goes well over a variety of grilled meats, roasted vegetables, or can even be used as a dipping sauce.

Instructions:

Heat the oil in a pan over medium heat. Sauté the onion and garlic in olive oil until fragrant. Add the tomato paste and canned tomatoes. Stir well and cook for 5 minutes. Add in the vegetable broth and Metaxa. Cook for another 5-7 minutes, until the sauce thickens.
